Today I realized that I can no longer afford (both money-wise and waistline-wise) to keep baking for no reason. Therefore, my baking habits will be stopped, save for holidays, birthdays, and other special occasions.

From here on in I will eat healthier… for real. This is a good thing! Baking will become more sacred.

And just a random question: If you eat fish, how can you call yourself a vegetarian??


Vegan cake?

I have a friend down the hall. She is allergic to dairy, among other things. Whenever we go out to eat, she makes us order dessert so she can watch us eat it. Sounds weird, but I’ve gotta say that I understand! If I could never have dessert… or bread… I would probably die.

I was pleased to find out that vegan desserts and foods are okay for her to eat. So I embarked on a journey: bake a vegan cake.

I’ll spare you the details and make a long story short: it needed extra baking time, the frosting was clumpy, there were flour globs in the cake. It actually tasted and looked good, though!

I was excited and took it down the hall only to discover that margarine has milk proteins in it; therefore she couldn’t eat it ): So instead I brought it to my other friends, and they devoured it within the hour.

So that was all yesterday.

Today I decided to give it another go. The process was a little easier, and I changed the shape of the cake. This time, I used Parkay (the only “butter” she can have).

So I’m liking this vegan kick! But that certainly doesn’t mean I’m giving up my butter and eggs (:

Today was a bad day. Maybe it was the fact that my ID got stolen (and was returned later, thank god). Maybe it was the fact that a tropical storm is coming and I got caught in it on my way to the gym and then looked like a drowned rat in front of hot blond trainer man. Maybe it was the fact that whoever lives above me likes to play RockBand constantly, even though he isn’t that good at it. Maybe it wasn’t any of things. Maybe it was all of them. All I know is that at the end of a bad day… I want to bake.

Now with a limited budget, I find it hard to just be able to make things on a whim. I have to use what I’ve got. Luckily, I had everything needed for these morsels of deliciousness.

I obviously substituted raspberries for black raspberries. I also made 6 mega muffins rather than 12 normal ones. As a result, I needed about 6 more minutes of baking time. These muffins are breakfast-y. They are not super sweet, but that makes them better, in my opinion. I’m rather impartial to muffins that are borderline desserts. I ran one down to my neighbor after they had cooled, and she loved them. Another success in my decent oven!

Making baked goods in my apartment’s school issued oven sounded daunting at first. At home, I am lucky enough to have a convection oven (I miss it so much!!). Today was my first encounter with this oven for making anything other than my roommates’ chicken nuggets and tater tots.

I job shadowed at the Hilton Orlando today. I wasn’t able to meet their Pastry Chef (we’ll call him the awesome Austrian), but was told great things about his pairings of sweet and savory. The director of Human Resources mentioned that she had sampled the awesome Austrian’s bacon and chocolate brittle recently. When I got back to the apartment 6 hours later, I was craving sweet and salty.

I apologize for the quality of my pictures. I am by NO means a photographer. I think you can get the gist of what I’m trying to show you though (:

I halved the brownie recipe, but I made the full recipe for the caramel. I went a little overboard with the topping… but to me that makes it way better! Next time, I think I want to try making this in a cupcake shape as suggested by one of my neighbors.

I have come to the conclusion that my oven… is decent.
